Yaay!

We got four beets with greens this past week as well :-) Ours are stripy and are currently roasting in the toaster oven.

That sounds like a well-balanced mix. Except pea greens, because I'm not sure what those are (what they sound like?) or what you do with them.

The beetroot seems to be over, here, just at the point where I bought a recipe booklet with a beetroot and chocolate cake in it...

I *adore* pea greens. I've only had them in restaurants or fancy salad mixes. There's an Arlington restaurant that serves a salad in spring, a little molded cylinder of tiny cubes of beetroot (slightly crunch but not hard, I don't know if the beets were barely cooked or very young or both) and equally tiny cubes of mild goat cheese, with a large handful of pea greens on top. It might not have had any salad dressing, or maybe something minimalist like a squeeze of lemon juice and a grind of black pepper.

My friends have a farmshare from NH, and last week they asked me to take some vegetables off their hands. (Their kids admire Ms. Potter, yet are limited in their willingness to feast upon actual lettuces.) I should find out if they have pea greens this week.
