a lemonade recipe
Jul. 16th, 2019 07:16 pmFox handed me lemons, so we made lemonade.
Specifically, Fox handed me two lemons and said "Mama said we should make lemonade."
Two lemons is fewer than I would usually use, so I thought I'd write down my approximate measurements in hopes of remembering the ratios.
2 lemons
1/4 cup + 2 T white sugar
1/4 cup + 2 T water
6 cups cold water
Scrub outside of lemons; quarter, and remove any pips. Get resident two-year-old to squeeze lemon quarters over a nice large bowl. This will take some time.
Meanwhile, combine sugar and 1/4 cup + 2 T water in small pot over medium heat, and stir until dissolved. Turn off heat.
Using peeler, paring knife, or whatever, but not a zester because the bits will be too small, produce about a loose tablespoon of the yellow part of the lemon peel, in strips. Be careful not to get any of the white part. Add to pot.
Bring to a simmer over medium-high and let simmer two or three minutes, stirring occasionally. Lemon should be detectable when you taste the spoon. Turn off heat.
Pour lemon syrup through a sieve into the bowl with the lemon juice, and stir to combine.
Pour the six cups of cold water (or to taste) into a pitcher with the lemon syrup, and refrigerate until any residual heat has gone.
Makes six servings, or about ten for the two-year-old. This is a sweeter lemonade than I would usually make, but Fox is not that into sour at this time in his life.
